These homemade buns are a lighter take on classic brioche, perfect for hamburgers, sliders, or even sandwiches. While not exactly diet-friendly (they are still enriched with eggs, butter, and milk!), they offer a softer, richer texture compared to regular burger buns.

400g bread flour (or all-purpose flour can be substituted)
2 tbsp sugar
1 tsp salt
7g active dry yeast or (20g fresh yeast)
1cup milk , slightly warm
2 tbsp butter , melted
1 egg , beaten

Directions

In a large bowl, whisk together flour, sugar, yeast, and salt.
Pour in the warm milk, beaten egg, and melted butter. Stir until a dough forms.

Transfer the dough to a lightly floured surface and knead for 5-7 minutes, until the dough becomes smooth, elastic, and pulls away from the sides of the bowl. If the dough feels too sticky, add a bit more flour, one tablespoon at a time, until it becomes manageable.

Place the kneaded dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for 30-40 minutes, or until doubled in size.

Divide the dough into 8 equal pieces. Shape each piece into a ball. Place the balls on a baking sheet lined with parchment paper, leaving space in between for them to rise further.
Cover the buns loosely with a kitchen towel and let them rise for another 30-40 minutes.

While the buns are rising for the second time, preheat your oven to 400°F (200°C).
Brush the tops of the buns with milk and sprinkle with sesame seeds, if desired.

Notes

For a richer flavor, use unsalted butter and add a pinch of salt to the melted butter before incorporating it into the dough.
If you don't have sesame seeds, you can brush the buns with melted butter or sprinkle them with everything bagel seasoning before baking.
To make hamburger buns, simply shape the dough into slightly larger balls.
These buns can be stored at room temperature in an airtight container for up to 2 days. They can also be frozen for up to 3 months. Thaw overnight in the refrigerator before reheating in a low oven.
