Roasted Broccoli With Potato Creamy Puree And Spicy Kick

Crispy roasted broccoli florets pair perfectly with a smooth and creamy potato purée, all brought together by a vibrant, spicy kick. It’s a showstopper side dish that complements any protein or can even be a vegetarian main course.

Ingredients:

1 head of broccoli, cut into florets

1 tablespoon olive oil

½ teaspoon salt

¼ teaspoon black pepper

For the Creamy Potato Purée:

2 large russet potatoes, peeled and cubed

½ cup milk (whole milk for extra richness)

2 tablespoons butter

Salt and pepper to taste

For the Spicy Kick:

1/4 teaspoon smoked paprika

Chopped fresh cilantro (optional, for garnish)

Instructions:

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Roast the Broccoli: Toss broccoli florets with olive oil, salt, pepper, and optional red pepper flakes. Spread them out on the prepared baking sheet in a single layer. Roast for 20-25 minutes, or until tender and slightly browned.

Prepare the Creamy Potato Purée: While the broccoli roasts, boil the cubed potatoes in salted water until tender (about 15-20 minutes). Drain the water and return the potatoes to the pot.

Mash the Potatoes: Using a hand mixer or potato masher, mash the potatoes until smooth. Add the milk and butter, continuing to mash until creamy. Season generously with salt and pepper.

Assemble and Serve: Once the broccoli is roasted and the potato purée is ready, spread the purée on a serving dish. Top with the roasted broccoli florets.
