Ingredients:
1/4 cup olive oil
2 tablespoons Dijon mustard (or whole grain mustard)
2 tablespoons fresh lemon juice
2 cloves garlic, minced
1/2 teaspoon dried rosemary
1/4 teaspoon red pepper flakes (optional)
1/2 teaspoon salt
1/4 teaspoon black pepper
1 pound bone-in, skin-on chicken thighs (4 thighs)
Instructions:
In a bowl, whisk together olive oil, Dijon mustard, lemon juice, garlic, rosemary, red pepper flakes (if using), salt, and pepper.
Place the chicken thighs in a single layer in a baking dish or large resealable bag. Pour the marinade over the chicken, ensuring each piece is coated.
Marinate for at least 30 minutes, or up to 4 hours in the refrigerator for deeper flavor.
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper for easier cleanup (optional).
