The Meat Filling

2 lbs lean ground beef

1 large onion, petite diced

2 tablespoons pine nuts, fried or toasted

2 tablespoons olive oil, light tasting

2 teaspoons black pepper, or less to taste

1 tablespoon 7 spice, or allspice

1 tablespoon salt

1 tablespoon sumac

1 tablespoon red bell pepper powder, or paprika

1/2 spoon of nutmeg

The Meat Stuffing

While the dough rises for the first hour, prepare the meat filling. In a large pan over medium heat, heat the olive oil and toast the pine nuts. Remove the pine nuts from the pan and set them aside.

Add the diced onions to the pan and fry them until tender and translucent. Remove them from the pan and set them aside with the pine nuts.

In the same pan, cook the ground beef over medium heat until all the water evaporates. Add the cooked onions, spices, and salt to the pan and mix well. Cook for an additional 1-2 minutes, then remove from heat.

Stir in the toasted pine nuts to the beef mixture.
