Baked Turkey Meatballs with Lemon Garlic Butter Sauce

Ingredients
For the Meatballs:
2 pounds ground turkey
1 cup shredded mozzarella cheese
1 egg
1/2 teaspoon Italian seasoning
2 teaspoons onion powder
2 teaspoons minced garlic
1 teaspoon crushed red chili pepper flakes (optional)
1 tablespoon grated Parmesan cheese (for garnish)
Olive oil (for baking)
For the Lemon Garlic Butter Sauce:
1/2 cup butter
1/2 lemon, juiced
1/2 teaspoon fresh rosemary, chopped
1/2 teaspoon fresh thyme, chopped
1/2 teaspoon fresh sage, chopped
1/2 teaspoon freshly cracked black pepper
1 teaspoon hot sauce (optional)
1/2 cup fresh chopped parsley
3 cloves garlic, minced
Instructions
Preheat oven: Preheat your oven to 400°F (200°C). Lightly grease a baking sheet with olive oil.
Combine meatball ingredients: In a large bowl, combine the ground turkey, mozzarella cheese, egg, Italian seasoning, onion powder, garlic, crushed red chili pepper flakes (if using), and Parmesan cheese. Mix well until combined.
Form meatballs: Using a cookie scoop or your hands, form the turkey mixture into small meatballs. Place the meatballs on the prepared baking sheet.
Bake meatballs: Bake the meatballs for 15-20 minutes, or until cooked through. Remove from the oven and drain any excess grease.
Make the sauce: While the meatballs are baking, melt the butter in a small saucepan over medium heat. Add the lemon juice, rosemary, thyme, sage, black pepper, hot sauce (if using), parsley, and garlic. Stir to combine.
Finish meatballs and serve: Drizzle the lemon garlic butter sauce over the cooked meatballs. Return to the oven for 5-10 minutes to let the sauce set. Serve the meatballs hot, with your favorite sides like cauliflower rice or a salad.
