Ingredients:
For the Salad:
1/2 cup Puy lentils, dry
1 cup water
1 bay leaf
4 medium beets
1/3 cup crumbled goat cheese
1/4 cup red onion, thinly sliced
1 handful parsley, roughly chopped

For the Vinaigrette:
3 tablespoons extra-virgin olive oil
1 tablespoon red wine vinegar
1 teaspoon Dijon mustard
1 clove garlic, crushed and minced
1/2 teaspoon sea salt
1/4 teaspoon black pepper
Instructions:
Roast the beets: Preheat oven to 400°F (200°C). Wash and loosely wrap each beet in aluminum foil. Roast in the oven for 1 hour, or until tender.
Cook the lentils: While the beets are roasting, add the lentils, water, and bay leaf to a pot. Bring to a boil, then reduce heat to low and simmer for 20 minutes, or until tender but not mushy. Drain and rinse with cold water.
Make the vinaigrette: In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic, salt, and pepper.
Assemble the salad: Once the beets and lentils have cooled, peel the beets and cut into bite-sized pieces. In a large bowl, combine the lentils, beets, red onion, parsley, and chives.
