For the Cake:
1 1/2 cups (150g) all-purpose flour, sifted
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
5 1/2 tablespoons (80g) unsalted butter, softened
2/3 cup (130g) sugar
2 eggs
1/2 cup Greek yogurt
1 or 2 drops vanilla extract (or use vanilla-flavored Greek yogurt)
2 peaches, sliced into wedges
For the Crumble Top:
1/2 cup (100g) sugar
3/4 cup (75g) flour
6 tablespoons (100g) butter, chilled and diced
Instructions:
Preheat your oven to 350°F (180°C) and get your pan ready by buttering a 9-inch springform pan and lining the bottom with parchment paper (don’t forget to butter the parchment paper too!).
Time for the crumble magic! Combine sugar, flour, and chilled butter in a bowl. Use a fork or pastry blender to create a crumbly mixture. Pop it in the fridge to chill while you work on the cake batter.
