Ingredients:

4 cups whole wheat flour (520 grams) OR you can use 2 cups whole wheat flour (260 grams) and 2 cups mixed grain flour (260 grams)

1/2 cup + 1 tablespoon roasted sunflower seeds

1/2 cup + 1 tablespoon sesame seeds

3 tablespoons caraway seeds

3 tablespoons flax seeds

3 tablespoons pumpkin seeds

2 teaspoons baking powder

1 teaspoon baking soda

Salt to taste

1 1/2 cups milk (375 ml)

3/4 cup buttermilk (180 ml)

2 tablespoons honey

Instructions:

Preheat the oven to 180°C (350°F).

In a large bowl, whisk together the flours, sunflower seeds, sesame seeds, caraway seeds, flax seeds, pumpkin seeds, baking powder, baking soda, and salt.

In a separate bowl, whisk together the milk, buttermilk, and honey.

Pour the wet ingredients into the dry ingredients and mix until a shaggy dough forms.

On a lightly floured surface, knead the dough for 5 minutes, or until smooth.

Shape the dough into a round loaf and place it on a greased baking sheet.

Make a deep slash along the top of the loaf.

Bake the loaf for 50-60 minutes, or until golden brown and cooked through.

Let the bread cool on a wire rack before slicing and serving.

Tips:

You can substitute some of the seeds mentioned in the recipe for other ones you prefer.

Make sure the milk and buttermilk are slightly warm, but not hot, to avoid killing the yeast.

Don’t over-knead the dough, as this will make it tough.

You can brush the top of the loaf with oil or milk before baking for a golden crust.

Serve soda bread with butter, jam, cheese, or any of your favorite toppings.

Notes:

This recipe makes one large loaf of bread. You can divide the dough in half and bake two smaller loaves.

You can store soda bread in an airtight container at room temperature for 3-4 days.

You can also freeze soda bread for up to 3 months.
