In a large bowl, combine Greek yogurt, self-rising flour, and salt (if using) with your hands. You don't need to knead or rest the dough; just mix until all the flour is absorbed.
Lightly flour a surface and transfer the dough. Divide the dough into 4 equal pieces.

Heat a pan or griddle over high heat. Once hot, place one naan flatbread face down and cook for 60 seconds.
